Ingredients for the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Premix (yields 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Cordial: Combine all the components inside a saucepan, heat until it reaches a gentle boil, stirring until the sugar dissolves. Next, turn off the stove and leave to cool entirely. Pour into an sealable bottle, cap it keeping it chilled, it can be stored for up to a month.
To make Batch Mix: Pour the specified liquid ingredients in a big jug, let it rest for one hour, then filter it preferably using cheesecloth, making it fully clarified.
When ready to serve: Add 85ml of the batch mix into your stirring glass packed with ice, gently stirring carefully for one minute to cool it down. Filter into an cold coupe glass or a similar vessel, garnish with the cranberries and complete it using a brief mist of mandarin oil over the top.
